Here is an idea on how to spend a delicious Valentine’s Day, without overspending and avoiding the crowds. For quite some time now, my husband and I made the decision to celebrate Valentine’s Day in a creative way, which means–no over priced flowers or dinners. One of my most memorable Valentine’s, is the one we spent watching a movie, with candle lights, and eating artichokes in bed {it was awesome}.

Curried Zucchini

Quickly prepared, with exotic results.


  • 4 Medium zucchinis
  • 1 tablespoon oil
  • 1/2 onion, grated
  • 1/2 carrot, grated
  • 2 tablespoons grated coconut
  • 1 teaspoon curry powder
  • 4 dates, cut in strips
  • 1/2 cup coconut milk or sweet wine
  • 1/2 cup cream


The main secret of any delicious dish is the love and passion of the one that makes it, so before you get started. Get in the mood.

Cut the zucchinis in half lengthwise. Warm the oil and rapidly sauté the zucchinis on both sides. Remove from the skillet. In the same oil, sauté the onion, carrot, coconut, curry powder, and dates for 5 minutes. Add the coconut milk and cook over low heat for 10 minutes. Place the zucchinis in the sauce and cook 10 minutes more. Turn off the heat, add the cream, and serve.
